Will Nicholson has twenty years of experience in the food industry, working as a consultant and researcher on sustainable diets. This has included a focus on shifting to plant-based food, cutting food waste, and improving sustainable sourcing as part of climate change and other sustainability strategies.
Will has worked both independently with leading businesses in the UK and Europe, and as a project manager in the non-profit sector. He also has a wealth of experience in private sector engagement with multiple stakeholder groups across industry, finance, civil society and public policy. Will has an MSc in Green Economy as well as hands-on experience as a chef and restaurant owner.
Away from work, Will is a keen mountain biker, hiker and happiest trundling around in his campervan. Curious fact: he once spent a winter teaching nordic skiing to Scandinavians.
